Bourbon and Papayo beans, grown in the lush landscapes of Huila, undergo a carefully monitored fully washed process led by Terra Coffee and local producers. The beans are de-pulped and washed to remove all mucilage, then fermented in water for 12 hours. Afterward, they are dried on raised beds for 10-12 days, depending on the weather.

This coffee is really interesting and has great depth for a washed Colombian. It has a heavy syrupy body with deep notes of sweet cinnamon and warm spice. Juicy pomegranate notes cut through the richness with a bright acidity, all together creating a surprising complexity.
